Head Chef

Our client is a beautiful building set in picturesque grounds in Middlesex near Walton on Thames. It is mainly a conference, training and meeting venue.

They currently have an exciting opportunity to recruit their Head Chef.

They offer breakfast, lunch and early dinner services to delegates. They also provide catering for occasional fine dining meals, events, weddings, afternoon teas and Christmas lunches.

Head Chef Requirements:
*NVQ qualification or equivalent
*Excellent craft skills background
*Successful progressive background in catering
*Basic and Intermediate Food Hygiene Certificate
*Strong Supervisory experience
*Ability to display a real passion for food and customer service

Head Chef Responsibilities:
*Plan, prepare, cook and present food to the standards required
*Ensure that the company’s reputation for excellent food and service is enhanced with the client and customers.
*Control portion size and monitor waste
*Ensure supplies are correctly issued, used and accounted for to carry out stock takes and food rotation procedures
*Maintain records relating to food production activities and supplier information
*Ensure Health and Safety and Food Safety Standards are maintained in line with company policy
*Set objectives and be responsible for the day to day running of the kitchen
*Assess employee performance and recognise training needs and potential as appropriate.
*Hold team meetings on a regular basis to communicate targets, standards required and company and client information

Hours:
-37.5 to 40 hours per week
-Working 5 out of 7 days
-2 days off per week.
-Straight shifts – earlies 7am till 3pm or lates 11am till 7pm.

Head Chef

We are looking for an experienced Head Chef to join this progressive and motivated team located in a beautiful Village near Brookwood, Surrey.

Our client is a small pub group offering a great menu with fine and hearty food created by their chefs from ethically sourced menus, and a variety of wines, beers and spirits, an extensive wine list and a range of beer and craft ales.

You will be an enthusiastic Head Chef who shares their passion for great food. You will be a strong and enthusiastic leader, leading from the front with proven capability of developing, managing and motivating kitchen teams. This Head Chef role will give you the opportunity to evolve the specials menu and exceed budgeted commercial expectations through a clear understanding of GP, P&L and labour costs. You will work closely with the General Managers and company Directors as a key contributor to the success of the pubs. You will also be key to ensuring a high level of quality fresh, local and seasonal food, to build the strength of our reputation and be first choice in our customer’s eyes.

Senior Chef – Monday to Friday

Our client caters for children’s day nurseries and they are looking for a Senior Chef to work in their busy production kitchen in Guildford, Surrey.

As a Senior Chef you will be responsible for overseeing a team of 6, preparing food for 1,300 children each day, ensuring that preparation and allergen procedures are followed.

The Senior Chef role also requires you to cover for the head chef when on holiday and some office work when the executive chef is on holiday. You will be responsible for ensuring quality of food production and staff productivity as well as some basic food safety standards.

This Senior Chef role offers fantastic working hours, working Monday to Friday, straight shifts, 5am to 2pm. There will be no weekend work required and they take Bank Holidays off (with pay!). They also close for the Christmas week.

To be successful in this role you should have previous experience in a similar senior chef role – Sous Chef / Head Chef and have a thorough understanding of HACCP. They value reliability, productivity, attention to detail and a positive attitude.

Chef – Golf Club

Our client, a private members golf club is looking for an experienced Chef to join their team near Guildford, Surrey.

The Chef will provide a range of food services, in an efficient and courteous manner, for the benefit of Members and visitors.

The Chef will aim to develop a good working relationship with fellow full-time employees and temporary staff, and so build a ‘House Team’ spirit that ensures smooth working of the Club as a whole.

MAIN DUTIES AND RESPONSIBILITIES:

Chef Manager

Our client are looking for an experienced Chef Manager to join their team at their flagship luxury Care Home near Woking, Surrey.

Set in stunning acres of landscaped gardens this Manor house, provides exceptional food, for a Breakfast, Lunch and Evening meal service.

As Chef Manager reporting into the Home Manager, responsibilities will include:
*Managing every aspect of catering within the location, delivering a quality catering service in line with health, safety and hygiene requirements.
*Leading the catering team and managing performance.
*Maintaining compliance with food hygiene and health & safety standards.
*Controlling kitchen stock, equipment and resources within budget.

Chef Manager Required knowledge & experience:
*Experience working within either a luxury care home or hotel.
*Intermediate or level 3 food hygiene certificate with Cater craft or similar award.
*Health & safety procedures including control of substances harmful to health (COSHH) and food safety standards.
*Proven chef and people management experience.
*Basic knowledge of dietary requirements for older people and the impact of food types on medication.
*Safe use of kitchen equipment including knives.

Required skills:

Executive Chef

Our client a private catering company based near Aldershot, Hampshire are looking for a strong Executive Chef to help lead and motivate their current team.

They offer high quality fine dining food to the aviation sector.

The role of the Executive Chef is to ensure the efficient and smooth running of the kitchen to achieve the highest standard of food production. To manage the day-to-day activities of the Sous Chefs, Chef de Partie’s, Commis Chefs and Kitchen Assistants.

The Executive Chef will control and manage the food cost in line with the budget, source ingredients in accordance with the Company’s sourcing policy and take responsibility for ensuring that only the highest possible standards are maintained when it comes to food quality in preparation, presentation and packing.

This role is a senior role within the company, which will require at least 50% of the working day away from the kitchen, performing kitchen management and administrative tasks. Therefore, the Head Chef must demonstrate that in addition to the required culinary skills required, they also possess the relevant man management and administrative skills required for the role.

The Executive Chef will drive the development of new dishes and techniques ensuring that the brief is fulfilled and the company’s ethos of culinary excellence is maintained. The Executive Head Chef will also need to keep on top of food trends as our clients will usually have experienced contemporary fine dining on a regular basis.

Job Knowledge, Skills & Experience
*Culinary and or catering/hospitality qualification such as degree or diploma or similar (essential)
*Food hygiene diploma and or food science technology qualification
*Intermediate HACCP qualification or equivalent (desirable)
*Management/Leadership qualification an advantage
*Extensive experience in managing a food manufacturing department
*Qualified Chef with global food experience preferable with inflight catering
*Extensive experience in managing teams within the food industry
*Experience of managing budgets, financial and performance targets
*Excellent written and verbal communication skills
*Good interpersonal skills
*Excellent leadership skills
*Innovative and pro-active thinker, creative with the ability to develop a concept through to design and development for production delivery
*Customer focused
*Excellent presentation skills

The working Schedule is 5 days over 7, straight shifts, with on average 2 weekends off per month.
